Vegan Blueberry Oatmeal Pancakes

I feel creative when I cook and bake. I feel creative when I'm doing things I love. Let's work on changing the mindset that creative people are only artists, actors, crafty JoAnn fabrics shoppers, doing needlepoint, etc. etc. etc. Creative living is all about following your own heart and connecting with the things that set your soul on fire. Today, it's some fabulous vegan blueberry pancakes I made for my husband who is recovering from brain surgery!

Ingredients:   1 cup of oatmeal turned to powder in blender  1 cup of gluten free or wheat flour  2 teaspoons baking powder  1 teaspoon salt  2 teaspoons cinnamon  2 cups almond milk  8 medjool dates  2 tablespoons melted vegan butter and extra for greasing griddle  2 teaspoons vanilla  Optional maple syrup and extra blueberries for topping   Directions:   Preheat griddle to medium heat and grease lightly with vegan butter. Combine all dry ingredients and set aside. Puree almond milk and dates in blender. Stir in almond milk mixture, melted vegan butter, vanilla, and vanilla. Pour batter by the quarter cup onto prepared griddle. Flip when air bubbles pop and pancakes begin to pull away from the edges. Top with syrup and blueberries.
